How to Store, Freeze, and Transport Cheesecake Like a Pro

Proper cheesecake storage is important to maintain freshness and quality. Mistakes can happen and be common; however, they don’t have to be the norm. In this guide, you will learn how to store, freeze, and transport cheesecakes properly every time. 

Cheesecakes require special care; with the high dairy content, keeping a cheesecake cold is crucial. Leaving dairy and egg products out for more than 2 hours is not advised, as it increases the risk of foodborne illness. However, when wrapped in an airtight container, cheesecake will last for 5-7 days in the fridge and up to 3 months in the freezer.

Storing cheesecake in the refrigerator. First, make sure that your cheesecake is completely cool to room temperature before refrigerating. Doing so will help prevent cracks from forming on top and the crust from getting soggy. Once the cheesecake is fully cooled, wrap the whole pan in plastic wrap, then cover with a layer of foil to prevent odors. You can also use an airtight container or a cake carrier to transport a cheesecake out of its pan. Also, move other foods that have strong odors away from the cheesecake. Now that the cheesecake is in the fridge and odor-free, let's talk about the eating timeline. Typically, homemade cheesecakes should be consumed within 3-5 days. However, store-bought versions will last for 5-7 days in the fridge. The reason for the difference is that store-bought cheesecakes contain preservatives and stabilizers in them to extend shelf life. 


Storing cheesecake in the freezer. If you want to freeze a cheesecake to eat later, the best types are denser and baked. I would not recommend freezing a no-bake cheesecake, as it is light and airy, and will form large ice crystals easily. Before putting a cheesecake in the freezer, chill it completely in the fridge overnight. Make sure the cheesecake is tightly wrapped in plastic wrap, either whole or in slices, before placing it in an airtight container. Label and date the container with a piece of tape before setting it in the freezer. It is best to freeze a cheesecake without any toppings. Now that the cheesecake is in the freezer, it will last for 1-3 months. Can it last longer? Yes, up to 6 months; however, the quality, flavors, and texture will not be the same. To properly thaw a cheesecake for eating, place it in the fridge overnight. Before serving, place the cheesecake on a table for at least 30 minutes; an hour is best. 


Transporting cheesecake safely. During transport, many factors can affect outcomes, so eliminating all variables is necessary. First and foremost, make sure that the cheesecake is cold. Then you will want a sturdy cake box or carrier that fits the cheesecake. Once you are in the car, make sure the box stays level at all times. If you are traveling short distances, these things are enough to do. However, if you are traveling longer distances, there is more you should consider. First, check the weather; if it's winter, place an ice pack under the cheesecake box. If it’s summer, using an insulated cooler or box will not only protect your cheesecake from the heat but also keep it from shifting.

Why is the cheesecake watery all of a sudden? 

There are a few reasons for this: 

1. If the cheesecake wasn’t fully cool to room temperature before packaging and placing in the fridge. 

2. The cheesecake was under-baked. 

3. If the cheesecake isn’t properly level and secure during transport, then cracks may form and liquid can come out from inside the cheesecake.

How to prevent a cheesecake from cracking during transport?

There are a couple of steps you can take with this.

1. Make sure that the cheesecake has been in the fridge for at least 6 hours. Overnight is better.

2. Use a cake board under the cheesecake and secure it to the box with tape.

3. Most importantly, keep the box on a level surface. 

Doing all this will help prevent the cheesecake from shifting, reducing the risk of cracking during transport. 


What to do if cheesecake absorbs refrigerator odors?

There are a few things that can be done; however, this is the method I would go with. If there are no toppings on the cheesecake, add some. Adding a strong-aroma topping such as chocolate ganache or caramel sauce can mask the odor.

Short answer: no. Cheesecake should only be left out for 2 hours, as the dairy will spoil.

Can I freeze cheesecake with toppings?

Yes, and no. Toppings like chocolate bars or nuts can be frozen with a cheesecake. However, fruit toppings should not be frozen with cheesecake. The reason is that the water in fruit toppings defrosts fast and can ruin the cheesecake.


How do I know if cheesecake has gone bad?

Spoiled cheesecake usually has a sour smell. Other signs are mold or a slimy film on top. 


Can you refreeze a cheesecake?

It is not recommended. Freezing, thawing, and then refreezing can create ice crystals that will break down the dairy.
